There's a George MALLARS, nightman, who may, or may not be this George, aprticularly as the baptism of son William in 1816 shows them living at "Marsh"

An act of 1696 required that lists of men qualified to serve as jurors be provided to the Quarter Sessions. To be qualified, the men had to be between the ages of 21 and 70 and possess property with an annual value of £10 or more. After 1730 the qualification was extended to men in possession of a long lease with an annual value of at least £20.4,5
It would seem likely that a "watchman" might be the George Mallars constable recorded giving evidence in several Old Bailey trials in the 1820s:
Jul 1822 trial of Isaac Denham:
GEORGE MALLARS . I am a constable. I apprehended him on the the 24th of June, in the New-cut, Lambeth. Mr. Cox's son gave him in my charge.

July 1822 Trial of WILLIAM CHAMBERS:
GEORGE MALLARS . I am a constable. I apprehended the prisoner at this house - some shirts and things were given to me by Dennis, at the watch-house; I saw this shirt taken off the prisoner's back.(Property produced and sworn to.)6,7

E. & O. E. Some/most parish records are rather hard to read and names, places hard to interpret, particularly if you are unfamiliar with an area.
